Historically, and still often today, Ryōtei operated on a system of referral-only for new customers and did not publicly post prices. This fostered an atmosphere of discretion and was where high-level business or political negotiations frequently took place in complete privacy.

Traditionally, a Ryōtei was the primary setting where patrons could arrange for entertainment by Geisha or Maiko (apprentice geisha), who would provide music, dance, and engaging conversation.
